Course Description:

Many recipes sound complicated, simply because the name sounds fancy or unfamiliar.
This course will provide you practical advice enabling you to learn a range of basic cooking skills, allowing you to produce tasty and healthy dishes from scratch. You will develop confidence through hands on guidance and demonstration. By the end you will be well capable of cooking delicious meals, surprising yourself with the ability to impress family and friends with your cuisine. Work as an individual or team up with someone, what works best for you ?

Recipes for each class:

      1. Mexican Chili and Rice 

  • Warm, comforting, and bursting with flavours, this Mexican chili recipe brings a taste of the fiesta straight to your kitchen. Perfect for cooler evenings or gatherings with friends and family, this dish combines rich spices, tender meats, and hearty beans for a satisfying meal packed with warmth, character, and a kick of heat

      2. Hungarian Chicken Paprikash, or “paprikás csirke,” 

  • A warm and comforting dish that captures the essence of Hungarian culinary heritage. Known for its rich flavours and creamy texture, this dish showcases Hungary’s famous spice: paprika.

      3. Strudel or Bakewell – Your Choice  

  • Austrian apple strudel, or Apfelstrudel:  A classic pastry that has delighted taste buds for centuries with its flaky, thin layers of dough filled with spiced apples, raisins, and cinnamon. This delightful dessert, often served warm with a dusting of icing sugar or a scoop of  vanilla ice cream, captures the essence of Austrian comfort food.
  • The Apple Bakewell Tart: A delightful twist on the classic Bakewell tart, combining the rich flavours of almond and jam with the tartness of fresh apples. This dessert features a buttery shortcrust pastry, a layer of sweet fruit preserve, sliced apples, and a light almond frangipane filling.

     4. Roast Summer vegetable (chicken) tart with almond crumble topping: 

  • A delightful way to showcase the bounty of seasonal vegetables with a nutty twist. The tart features a pastry crust filled with a medley of roasted vegetables topped with a crunchy almond crumble. Vegetarian or Chicken Version – You Choose

     5. A taste of the Florida Keys : You Choose 

  • Coconut Mango Chicken is a vibrant dish from the Florida Keys that features tender chicken marinated in a tropical blend of coconut milk and fresh mango puree, then grilled or baked to perfection, often served with a garnish of toasted coconut flakes and fresh mango salsa, showcasing the region’s lush fruit and rich culinary heritage. Ideal for warm-weather dining, it offers a taste of the islands in every bite.  
  • Key Lime Pie: A classic dessert originating from the Florida Keys, key lime pie features a tangy filling made from key lime juice, sweetened condensed milk, and egg yolks, all nestled in a crumbly graham cracker crust. Topped with fluffy whipped cream, it offers a perfect balance of sweet and tart flavours, embodying the essence of summer in every bite.
  • Key Lime Coconut White Chocolate Cookies are a delightful blend of tropical flavours, featuring zesty lime and creamy coconut paired with smooth white chocolate chunks. The result is soft, chewy cookies with a refreshing citrus kick, perfect for summer gatherings or any time you crave a sweet escape

     6. Leek and Goat Cheese Tart, Lyonnaise Potatoes and a Summer Salad. 

  • Tart: A savoury pastry dish featuring a flaky crust filled with sautéed leeks, goat cheese, eggs and cream giving it a richer flavour than a regular quiche. 
  • Lyonnaise potatoes, a classic French dish, consist of thinly sliced potatoes that are sautéed in butter until crispy and golden,  combined with sautéed onions for added flavour.

     7. Meatballs and Rice / Chips : You Choose 

  • Satay Curry Meatballs and Rice: A flavourful dish that features tender meatballs made from minced meat, typically chicken or beef, flavoured with the rich and aromatic spices, such as turmeric, cumin, and coriander. These meatballs are simmered in a creamy coconut milk-based curry sauce, infused  with peanut butter for a nutty taste and served over a bed of fluffy rice.
  • Ikea meatballs : Are a signature dish offered at the Swedish furniture retailer, known for their savoury, tender texture made from a blend of minced meat, typically beef and pork, mixed with breadcrumbs and spices. They are served with a rich, creamy gravy that complements the  meatballs perfectly, along with sides like mashed potatoes, lingonberry sauce, and pickled cucumbers, creating a comforting and flavoursome meal.

When I left school I worked in the travel business and it was from there my interest in food grew. After 8 year, despite enjoying the work, I packed it in to train as a chef. At my first interview, the owner of the restaurant asked me if was I mad leaving an office job to work the hours in hospitality, to which I replied, possibly.  Despite never working in a kitchen and with no prior training he gave me a start and I never looked back. 
 
Fast forward 15 years, I went back to college, achieved a BSc. (Hons) 1st in Culinary Arts Management and then a PG in Further Education. I have been teaching both adults and young people for 12 years, from QQI Level 3 Cookery up to Level 6 Professional Cookery / Culinary Arts. 
 
I maybe a qualified chef and teacher but I’m still learning and get great enjoyment out of trying new cuisines and recipes. Although the recipes in this class sound fancy or complicated, they are not and you will settle right in. Everyone has strengths and weaknesses, but teamwork and with hands on participation from myself,  you may even surprise yourself how adept you are. I look forward to cooking with you, hearing and discussing your ideas, culinary experiences and take on the different recipes we will be cooking.
